Lecithin is a common compound found in cells of all living organisms; it is necessary for proper biological function. Lecithin was discovered in 1805 and has been proposed for use in treating liver ailments, high levels of cholesterol in the blood, and nerve diseases, as well as in the food processing industry. Lecithin originated from the Greek lekithos, referring to egg yolk.

Lecithin is a phosphatide, or phospholipid, that is present in living things and is chemically made up of a combination of diglycerides of stearic, palmitic, and oleic acids linked to the choline ester of phosphoric acid. It is a key component of animal nervous tissue and brain substances as well as being present in plants.

Lecithin is insoluble but swells up in water and sodium chloride solution, forming a colloidal suspension. Its melting point is 236-237 degrees Celsius. When the acid value is around 20, lecithin is a waxy mass; when the acid value is around 30, it is a pourable, thick fluid. It is nearly white when freshly prepared, but quickly turns yellow or brown in air.

Soybean lecithin, a byproduct of the production of soybean oil, makes up the majority of the lecithin used in commerce.

Brains and egg yolks are used to make the homoeopathic drug lecithin.

USES—It is used to treat liver complaints, nerve disorders, mania, high blood cholesterol, and maniacal disorders.

In tuberculosis, lecithin causes a notable improvement in nutrition as well as a general improvement. Lecithin has been used as a galactogogue remedy and makes breast milk more nourishing.
